Haikara is celebrating this gentle transition with bright flavors and moments shared around the table.
To accompany the season, we’re highlighting sake : fresh, delicate, and perfect for the first lunches on the terrace or long, lingering dinners.
LES LARMES DU LEVANT BREWERY

Six years of a committed collaboration!
Founded with the aim of establishing sake within the French gastronomic landscape, the brewery crafts artisanal batches while respecting traditional Japanese methods : careful rice selection, meticulous koji work, and slow, precise fermentation.
Based in France, it champions a demanding, small-scale production where each batch expresses balance, purity, and aromatic finesse.
A dialogue between Japanese know-how and French terroir, one that we’ve been exploring together for six years now.
THE FAMOUS SAKECH 2025

Last year, we imagined SAKECH, a sake born from a collaboration between our restaurant, the brewery Les Larmes du Levant, and the artist Chatcon.
A sake designed as a meeting point : precise brewing, a gastronomic identity, and a unique graphic universe.
Chatcon signs the label of this 2025 edition, bringing an artistic dimension that extends the experience beyond the glass.
An exclusive, limited-edition cuvée, to be discovered at our tables or on our eshop.
NOT EVERYONE WILL GET ONE

To mark the 2025 cuvée, we teamed up with the artist Chatcon to create an exclusive series of t-shirts, inspired by the unique graphic universe that accompanies our collaborative sake.
Designed as collector’s pieces, they let you take a part of this collaboration home, far beyond the glass.
A few are still available on our eshop, a rare chance to keep a tangible memory of this limited edition and extend the experience at home.
WE WEREN'T GOING TO STOP THERE !

To be sure you taste all of this properly in our restaurants, we invited the artist and ceramist Raphaël Serres, based in Montreuil at Magma Hotel, to imagine a series of ochokos and sake carafes.
These creations are far from ordinary objects : they are little characters that sneak into everyday life and turn each service into an unexpected scene.
Each piece plays with material and gesture, as if telling its own story alongside that of the sake.
You can discover these pieces in our two restaurants, to enjoy sake in a completely new way.
They are not for sale, they are an integral part of the experience, a small world to explore, glass in hand.
